Cumin (Cuminum Cyminum L.) is well known as "JEERA". India is the largest producer and exporter of Cumin seeds in the world. Cumin has an intensely strong flavour much similar to Caraway. Cumin seeds have an aromatic odour and a spicy taste. The odour and flavour of Cumin is derived largely from the Essential Oil, which contains Cumin Aldehyde as the main constituent. The Essential Oil of cumin can be obtained by distillation process on the dried fruit of Cumin. The residue left after the extraction of oil contains protein and fat and is used as cattle fodder. The harvesting season is from the end of January to middle of May. APPLICATIONS / USAGES : Cumin is extensively used as condiment. Indian Cumin is used in foods, beverages, liquors, medicine, toiletries and perfumery. The spice is of particular value in blending of Indian Curry Powder. Cumin is the key ingredient in all types of curries and Chili powders. Cumin is used both as medicinal spice and as a flavouring agent. Cumin is used as a flavouring agent in Cheeses, Pickles, Sausages, Soups, Stew, Stuffing, rice and bean dishes and Liquors. Moderate mixing of cumin with other spices impart a pleasant flavour. Cumin boiled in water is an excellent refresher. In western countries, cumin is used into several types of chutneys, pickles, soups, cheese spreads, cheese toppings, meat dishes, bakery products , sugar cookies and fruit pies. Oil of Cumin is used in fragrances. As a medicinal Plant, Cumin has been utilized as an antispasmodic, Carminative, sedative and stimulant. Cumin oil has been recorded to have antibacterial activity. The Essential Oil of Cumin is used in flavouring many preparations such as cheese / dairy produce, baked food, etc. Because of its powerful odour and flavour, the oil is used sparingly and carefully. The oil is used in perfumery and for flavouring liquors and cordials. It is used in fat and soap industries and also as an efficient digestive. TYPES / FORMS : Indian Cumin is exported in its natural Seed form as well as Powder form, besides as Essential Oil.
